Spring appetizers should feel light, bright, and easy to share—more “one more bite” than heavy and filling. This time of year is all about the fantastic produce like vegetables, fresh herbs and citrus. We will be working with quick cooking methods that keep the flavors clean. The suggestions below can be used for anything from patio hangs to holiday brunches, and most can be partially prepped in advance. 1) Asparagus Bundles
Wrap prosciutto around a few asparagus spears, and then roast or pan-sear them until the ham is crispy and the asparagus is tender. A squeeze of lemon freshens up the taste instead of it being salty. They can be served warm or at room temperature, which is perfect for grazing. If you want a dip, a simple lemony mayo or yogurt sauce works just fine.
2) Deviled Eggs
Classic party food deviled eggs are great for spring as they lend themselves perfectly to herbs such as chives, dill, and parsley. Combine the yolks with mayonnaise (or Greek yogurt), Dijon mustard, and some pickle juice or lemon to add some lift. Use a pipe or spoon to fill the rest and finish with some herbs for a clean, green bite. You can prepare them in advance and store them in the fridge until the guests come.
3) Spring Crostini

Smashed peas are a quick spread that captures the essence of spring in a single bite. Combine them and spoon the mixture over toasted baguette slices. Feta cheese is optional but goes nicely with the sweet peas. Serve immediately after assembling so the toast remains crisp.
4) Radish Tartines
This is a simple task to accomplish, however, it always seems to vanish quickly. Spread good butter on the toast, top with thin slices of radish, and finish with some flaky salt. The crunch and peppery bite is rich and satisfying. Chives, if you have some, will add to the spring feel.
5) Tea Sandwiches

Cucumber tea sandwiches are refreshing and ideal for brunches and showers. Spread some herbed cream cheese on some soft bread, add thin slices of cucumber, and cut the bread into neat rectangles or triangles. Dry the cucumbers so that the bread stays dry. The spread has some lemon zest which brightens up the flavor.
6) Vegetable Crudites
Use the best crunchy vegetables you can find such as snap peas, radishes, baby carrots, and lightly blanched asparagus. The green goddess dip is herbal, garlicky, and lemony, and elevates the whole tray above merely serving it with ranch. Chill everything right up until serving time. It is also a good choice if you want to stay gluten-free without putting in too much effort.
7) Smoked Salmon Bites

Replace the crackers with cucumber rounds and you have a fresh, simple canapé. Spread the cream cheese enhanced with lemon and dill and crown it with smoked salmon. A few capers or slices of very thin red onion add a touch of acidity. You can prepare these early as they last long in the fridge.
8) Whipped Dip
Whipping ricotta may sound sophisticated, but it only takes a few minutes if you use a food processor (or just stir vigorously). Combine olive oil until it becomes light and spoonable, then add salt, a squeeze of lemon, and lemon zest. You can serve with crostini or, for a sweet-savory twist, provide strawberries and snap peas for dipping. Cracked black pepper on top enhances the taste.
9) Carrot Hummus

Roasted carrots blended into hummus add sweetness and a color that looks right at home on a spring table. Blend together cooked chickpeas, tahini, garlic, lemon, and cumin until the mixture is smooth. Finish with olive oil and toasted pepitas or sesame seeds for a crunchy topping. You can have it with pita, crackers, and any raw veggies you have lying around.
10) Caprese Skewers
Caprese skewers are a tried and true favorite, and the best part is, they require little to no cooking. On short skewers, thread cherry tomatoes, mozzarella pearls, and basil. Right before serving, add olive oil and salt. If you’d like, you can also add a drizzle of balsamic glaze. Keep them cool to maintain the mozzarella nice and firm.
11) Strawberry Crostini

This appetizer is all about that sweet, tangy, and crunchy flavor. Spread goat cheese on the toasted bread, then top with strawberry slices and chopped pistachios. A light drizzle of honey brings it all together without turning it into a dessert. Assemble just before serving to keep the toast crispy.
12) Shrimp Cocktail

A shrimp cocktail is perfect for a celebratory occasion. It is also light and refreshing which aligns with the spring vibe. Use cooked shrimp and chill them until they’re cold and bouncy. For a brighter sauce, mix ketchup, prepared horseradish, lemon or orange juice, and a splash of hot sauce. Serve with lemon wedges and lots of napkins.
13) Mini Quiche

Mini quiches can be served hot or at room temperature, making them very convenient. The combination of leeks and Gruyère makes for a soft and savory filling that still brings a sense of comfort associated with the season. If you want to keep preparation simple, use pie dough that you can buy from the store or phyllo cups. Bake until just set so the insides remain creamy.
14) Puff Pastry Pinwheels

It’s great to have your host’s work done thanks to the puff pastry. Combine chopped spinach, feta, and garlic, and a bit of lemon zest, then roll and cut into pinwheels. Bak tot het goudbruin en knapperig is. They are wonderful right out of the oven, but also travel well to potlucks.
15) Spring Rolls
Fresh spring rolls are all about having that crunchy texture and plenty of herbs, like lettuce, cucumber, carrot, and lots of mint and cilantro! If you would like them to be more filling, add shrimp or tofu. A peanut dipping sauce is rich, but it doesn’t weigh you down. Cover the rolls with a towel that has been dampened slightly so that the rice paper will not dry out.
16) Zucchini Fritters

Zucchini fritters have a crisp outside and a soft inside which makes them very moreish. Drain the grated zucchini well before combining it into your batter so that it isn’t too watery. Then, pan-fry the mixture in a thin layer of oil. Serve alongside yogurt that has been blended with lemon, garlic, and salt. Best served hot, but still good served at room temperature.
17) Crab Cakes

Using lighter fillers can make giving crab cakes a heavier-than-usual snack feel. Make sure to use a lot of crab meat and just a little binder, and light seasoning so the seafood remains the focus. Sear until golden and pair with lemon aioli or a simple mayonnaise-Dijon sauce. Prepare the cakes in advance and refrigerate them so they hold together while baking.
18) Baked Brie

Baked brie is a warm centrepiece that goes great with fruit and cracker crisps. Top score, bake until the center is soft, and while still hot, add honey and thyme. The sweet-herbal topping prevents it from having a heavy taste. Pair with sliced apples, grapes, or strawberries for a spring-like board.
19) Marinated Artichokes

Artichokes that have been marinated make for a simple but sophisticated appetizer. Artichoke hearts should be combined with olive oil, lemon, parsley, and a little red pepper flakes. Let them sit for a minimum of 20 minutes to absorb the flavors. They’re great on their own or as part of an antipasto platter.
20) Asparagus Fries

These are for those who enjoy a crunchy snack but preferable one that is a little greener. Lightly coat asparagus in a breadcrumb and Parmesan mixture, then roast until they are crisp and tender. You can dip these in marinara or a mayo with lemon. Because these go quickly, consider making a double batch if you have company.
21) Flatbread Bites

An easy substitute for a warm appetizer is flatbread. Add topping of tomatoes, mozzarella, and basil, and bake until bubbly and edges are browned. Cut it into small pieces so it can be easily picked up without using plates. Just-baked bread is extra fresh when you drizzle a little olive oil on it.
22) Salad Cups

Especially with a little tangy cheese, beets and citrus are a classic spring pairing. Combine roasted beets (store bought is ok), orange segments, and a basic vinaigrette. Spoon the mixture into small lettuce leaves so that guests can pick them up like little cups. The colors by themselves brighten up the table.
23) Stuffed Mini Peppers

The natural sweetness and crunch of mini bell peppers make them ideal for stuffing. Fill with herbed cream cheese or a feta-yogurt mix, and chill until ready to serve. Finely chopped walnuts or sunflower seeds can also be added to the filling for more crunch. They are neat for eating and simple to prepare in advance.
24) Tzatziki Dip
Tzatziki has a cool, garlicky flavor that pairs perfectly with spring vegetables. Grate the cucumber and squeeze it well. Then combine it with the Greek yogurt, dill, lemon, and olive oil. Let it rest in the fridge for the flavors to meld. Accompany with pita triangles, carrots, cucumber, and radish.
25) Chicken Lettuce Wraps

Lettuce wraps remain light yet satisfying enough for hungry guests. Prepare the ground chicken with the soy sauce, a little sesame oil, and also with ginger and garlic. For an added crunch, spoon into crisp lettuce leaves and add shredded carrots or cucumbers. Put a little extra sauce on the side so everyone can season to taste. See the recipe HERE.
26) Mushroom Skewers

Roasted mushrooms provide a rich earthy taste that offsets all the brighter bites of spring. Mix with olive oil, garlic, and herbs; roast or broil until browned. They are easy to serve and eat because of the skewers. One spoonful of herby sauce or a squeeze of lemon keeps them from being too rich.
27) White Bean Dip

White beans create a smooth and mild dip that will take on any flavors you choose to add. Use lots of lemon and garlic when blending with olive oil until smooth and creamy. It is a great substitute for hummus and goes great with crunchy vegetables. Blend some parsley or basil for additional spring flavor.
28) Mini Pavlovas

Not all appetizer spreads need to have a dessert option, but mini pavlovas are an entertaining sweet addition for spring and are still a light option. The crisp meringue shell and soft center combine perfectly with whipped cream and fresh berries. You can bake the meringues in advance and put them together just before serving. Store them in a dry spot so they remain crisp until you are ready to eat them.
