About Nathaniel

Nathaniel Lee

Self-Taught Chef · Recipe Developer · HomeViable

Nathaniel is self-taught — no culinary school, no nutrition degree. He learned to cook the way most people do: watching, tasting, and refusing to stop asking why. He was particularly inspired by the techniques behind how and why food works, not just how to follow a recipe. He has been developing and publishing recipes since 2019, first at BeginnerFood.

At HomeViable, Nathaniel kept seeing the same thing: home cooks who could follow a recipe perfectly, but couldn't adapt when something went wrong. They knew the steps but not the principles.

Anyone can follow a recipe. The cooks who get better are the ones who learn why. Every dish here is meant to teach you something.

HomeViable is his answer to that. Every recipe here teaches something. Every technique is explained, not just demonstrated. The goal is for readers to understand their food, not just cook it.

Stop eating food. Start tasting it.

Nutrition Analysis

Rachael Derr

Registered Dietitian · Nutrition Facts & Allergens

When a HomeViable recipe includes nutrition numbers, allergen notes, or label claims, we hand it to Rachael Derr, a Registered Dietitian and Culinary Nutrition Specialist with more than thirteen years in food service nutrition. She is a dietitian at Purple Carrot, where she handles nutrient and allergen analysis, FDA Nutrition Facts panels, and recipe development with the chef team. Before that, at Garden Fresh Restaurants, she managed menu labeling compliance and allergen analysis and helped develop recipes and HACCP procedures for 97 restaurants. She also analyzed menus for national restaurant chains through Healthy Dining Finder.

Food is meant to be enjoyed, and it can also nourish our bodies in incredible ways. Nutrition isn’t one-size-fits-all.

Rachael earned her Bachelor of Science in Food Science & Nutrition from San Diego State University and completed her dietetic internship through UC San Diego Health. She uses ESHA Genesis nutrition analysis software in her work and stays active in community gardening and accessible-nutrition initiatives across San Diego.

Behind the Camera

Jackie VanHatten

Professional Photographer · HomeViable

Most food blogs are shot by their authors on a phone, in whatever window light happens to be around. HomeViable is not most food blogs. For popular dishes, we utilize the skillsets of Jackie VanHatten, a working professional who has built her career capturing weddings, families, and brands across five countries.

Jackie owns VanHatten Photography in Poway, California, and has spent more than fifteen years behind the camera. Her assignments have taken her from San Diego to the Caribbean. SDVoyager profiled her work in their feature on the photographers shaping the look of San Diego.

A recipe deserves a photograph that makes you want to cook it. Hiring a professional was not a luxury. It was the standard the food deserved.

She brings the same eye for emotion, light, and composition to a plate of braised short ribs that she does to a wedding day or a family portrait. That is the difference between food you scroll past and food you save.

The Philosophy

Cook with intent, not just instructions.

Most home cooks are intimidated by techniques that are actually straightforward once you understand the why. My job is to make that click for you. Not with jargon. Not with expensive tools. Just clear thinking and good food.
