I enjoy low carb lunches as much as I enjoy running errands. They are quick and practical and there’s not a lot of fluff. The issue is that low carb lunches are often viewed as depressing desk salads, and next thing you know, you are digging through your bag for crackers like a raccoon on an unfulfilling hunt. These ideas give you the opposite of what the concept says: lots of protein, fiber, and fat, as well as lots of taste so you do not feel like you are on a diet in an office with flickering lights.

1) Chicken Salad Wraps
I’ll admit I used to think lettuce wraps were code for “we ran out of bread.” Then I made chicken salad properly: plenty of celery crunch, black pepper, dill, and enough dressing to hold it together, and it clicked.
The experience of lunchtime is really elevated by the crunch and freshness of romaine or butter lettuce. For added staying power, try including some chopped walnuts or diced avocado.
2) Turkey And Cheese Roll-Ups
I will enjoy my first “no stove, no excuses” lunch. Rolling turkey with cheddar or provolone cheese, mustard, and pickles is a sandwich that forgot the bread. You d likely appreciate the distinctive blend of salt and tang if deli subs are missed. If you re searching for something juicy and sweet, toss in some cherry tomatoes.
3) Tuna Stuffed Avocado
Tuna salad in an avocado half is the kind of lunch that makes you feel like you have your life together, even if your email says otherwise.
Avocado introduces additional fat and creaminess, which is likely to result in higher satiation levels for consumers than the offering that includes only tuna. I personally believe that leaving out the capers or pickles, and instead including a touch of lemon, some celery, and maybe a briny flavor would work. Just spoon it and keep on going.
4) Egg Salad Pepper Boats

I trust a good cardigan as much as I trust a good egg salad. Mini bell peppers keep both the salad and the crunch feeling fresh, and avoids that ‘I just ate a whole tub of egg salad’ feeling. I like to add some Dijon mustard, a tad bit of paprika, and a little bit of minced onion, but you do you. For your own sake, be mindful of your chopping (unless you like to take what some might call ‘unacceptable’ risks in meetings). If you are someone that does meal prep, this keeps well for a handful of days.
5) Greek Chicken Bowl

This is basically a Greek salad that decided to be lunch.
When cooked chicken is added, this becomes an actual entree and the mix of feta and olive oil is so rich you won’t even miss the bread. If you have oregano or za’atar, sprinkle some on and enjoy this little holiday it offers. Those needing more fiber may want to include some chopped romaine.
6) Cottage Cheese Bowl

Cottage cheese is high in protein and low in effort, which is why I value it. I enjoy the savory side even more, particularly with the addition of some tomatoes, peppers, and olive oil for texture. If you like everything seasoning, you’re gonna love this one. It gives the crunchy onion vibe without that lunchtime mess. Additionally, you could select something that you’re able to eat some of it now and keep a portion for later.
7) Salmon Salad
Regarding your dilemma of wanting something light but not wanting to be hungry in an hour, cooked salmon (even leftovers work beautifully) has a satisfying richness, while arugula keeps it peppery and alive. For dressing, I sometimes want something heavier, so I usually just want lemon with a little olive oil. 9) Burger Bowl
This is the lunch I prepare when I wish to have the taste of fast food, but I want to avoid the fatigue that typically follows. Chop up the cooked burger patty and mix it with some lettuce and pickles. Then, make a “fast sauce” by mixing relish with a little mayonnaise and mustard. Once you try it, I’m sure you will agree. For additional crunch, you can also put some sliced onion or even a sprinkle of sesame seeds.
10) Turkey Taco Salad
Taco salad is a classic dish since it is built mainly on protein and veggies while still feeling indulgent. Mix ground turkey (or beef) with some seasoning and salsa to give it that acidity. Then finish with a tiny dollop of sour cream to add some creaminess. People can feel both ways on this, and that is completely rational. Instead of the chips, use crushed pork rinds to give that crunch. I usually add more lettuce to make it not just meat in a bowl.
11) Shrimp Caesar Salad
I believe that a Caesar without croutons is still a Caesar. Seeing the cooked shrimp may have us feeling like we are having a fancy overpriced lunch, which is a nice little boost to morale. I think the absence of bread bits is justified because of all the flavor the parmesan and dressing add. If you are tracking calories, the shrimp and parmesan are already the stars so go easy on the dressing.
12) Caprese Chicken
I have done this on days where I lacked the motivation to actually `cook`, but wanted to avoid something that felt lazy or like an afterthought. It is quite simple to prepare, using tomatoes, mozzarella, basil, and olive oil. These are all uncomplicated, fragrant, and very easy to work with. Adding some sliced cooked chicken will elevate it from a snacky plate to an actual lunch. Balsamic is nice, but not a necessity.
13) Zucchini Noodle Bowl
Zoodles can become watery if you’re not careful. That’s why I like to keep things simple with a quick sauté and a toss with pesto. I appreciate how much time rotisserie chickens save me on weeknight dinners. Since pesto is just herbs and fat, this lunch tastes really rich. If you’d like more substance, you can add some cherry tomatoes or a bit of sautéed mushrooms.
14) Broccoli Cheddar Soup

Thick soup is my favorite kind of incognito meal.
Keep it low-starch by leaning on broccoli and cheese rather than flour, and blend part of it if you like that velvety texture.
Incorporating shredded chicken allows you to easily pack this for a busy afternoon. I once had a disaster with this soup when I spilled it on a sweater. Even so, I think the soup is worth the mess.
15) Cucumber Sushi Bites
Although they may seem elaborate, they are doing pretty simple assembly work. The crunch comes from the cucumber, the cream cheese adds a layer of texture, and the smoked salmon brings some salty sophistication. However, you could add dill or some layering spice mix if desired. Although this is not a very filling lunch, a boiled egg or a side salad will be enough to keep most people satisfied.
16) Snack Plate

On occasion, I value variety over actual recipes. For example, a small portion of salami and cheese with a handful of olives and a few crunchy veggies won’t result in excessive carbs and is a great snack. The solution is to include enough protein so that it doesn’t become an endless grazing situation. If you are watching your sodium, consider using roast turkey or additional fresh veggies in place of the other ingredients.
17) Chicken Stir-Fry
Stir fry is quick and easy and you only need one pan for the meal. With this recipe, you can use chicken along with a variety of vegetables for the stir fry. Keep the sauce simple. Soy sauce, garlic, ginger, and maybe a little bit of lime. For the cauliflower rice, remember to avoid the soggy rice. I dry sauté it before I add any of the wet ingredients. If you get hungry quickly, you can take more chicken.
18) Chicken Parmesan Bowl
It seems like I’ll have to make do with comfort food without any breading again. That means I’ll eat the leftover cooked chicken. I will warm some marinara sauce and melt mozzarella cheese. This dish has cheese and sauce which makes it better than all the components. If you want, you can also serve this with some sautéed zucchini or spinach.
19) Mediterranean Tuna Bowl
Traditional Mediterranean tuna salads sometimes use beans, but if you’re keeping carbs low, just double down on crunchy vegetables.
Though canned meals may seem basic, tuna with olive oil and lemon can be considered somewhat fancy. With the addition of fresh parsley, it elevates the dish and avoids the taste of a lunch from the pantry. You can increase the fat content of the dish for satiety by adding an avocado or a spoonful of tahini dressing.
20) Egg Drop Soup
One lunch option I chose was egg drop soup. From a nerdy perspective, it’s enjoyable to cook broth, whisk an egg, and slowly drizzle the egg into the broth and watch it turn into ribbons. Then I put in some spinach so it wilts while still looking bright. For a more filling meal, you can add sliced cucumbers or the leftover chicken you have.
21) Cobb Salad
I am grateful for the efficiency of a Cobb salad. This is not a simple salad with ingredients like chicken, egg, bacon, and avocado. It is important to cut all the ingredients, so you don’t end up eating a large piece of bacon. If you find that heavy lunches upset your stomach, you might want to consider a decrease in the bacon and cheese and keeping the avocado.
22) Cabbage And Sausage
Despite the minimal ingredients, it truly smells like a meal was prepared.
Cabbage gets sweet and silky when sautéed long enough, and sausage brings fat and seasoning so you don’t have to think too hard.
I take the risk and add chili flakes. I find it quite effective for the days when you don’t have time to eat, as i find it filling.
23) Turkey Meatballs

Meatballs are the easiest food to prep for meals.
Make a batch (or buy decent pre-cooked ones), warm them in marinara, and serve with zucchini slices (sautéed or roasted) so the plate isn’t just red sauce and ambition.
It reheats well and stores well. To enhance taste, you may wish to add some parmesan cheese.
24) Salmon Poke Bowl
I am referring to cooked salmon, not the raw variety, as salmon is easier to take as leftovers and salmon is easier to cook as it is easier to eat as leftovers and easier to take to the office. Construct it like a poke bowl and include cucumber, avocado, sesame, soy sauce and substitute cauliflower rice. You can satisfy your sushi bowl cravings without the fear of a rice coma. If you want a little more spice, a small amount of chili sauce is good.
25) Roasted Vegetable Salad
If you do not know already, Halloumi is squeaky cheese – whether that’s endearing or off putting is up to you! On a bed of leafy greens, roasted veggies, and fried halloumi (all dressed in lemon), you probably won’t need any grains, since the combination of warm veggies and salty cheese is filling enough. If you don’t have Halloumi, you can use Feta cheese. Just don’t sear it!
26) Spinach Omelet

I am in complete agreement with this small act of rebellion: having breakfast for lunch. Unless you plan on being a French chef, preparing a goat cheese and spinach omelette shouldn’t take you longer than 10 minutes. The taste of normal eggs gets a lovely upgrade with the inclusion of goat cheese due to its rich and tangy flavor. I personally like to add some sliced tomatoes on the side to provide some freshness.
27) Chicken Shawarma Salad

Shawarma seasoning makes waiting in line for lunch worth it. You can take some cooked chicken and season it with cumin, garlic, paprika, and lemon. Then put it on a salad with some cucumbers and onions. Drizzle some yogurt-garlic sauce on it and it turns into a “I would definitely order it” kind of healthy meal. If you think the raw onion is too overpowering, you can marinate it in lemon juice for a little bit.
28) Buffalo Chicken Salad
Despite the flavor being associated with wings, I also enjoy buffalo flavor. However, I don’t always want to eat wings and deal with the aftermath. If you want to recreate the experience, you could combine shredded chicken with some hot sauce, and either mayo or yogurt (whichever you prefer), add some celery if you want an extra crunchy texture, and then for that salty kick, toss in some blue cheese. If you have the courage, you can go without bread for this. If you are not great with spicy food, it may be wise to start with a small amount as buffalo sauce can sneak up on you.
29) Beef And Broccoli

Beef and broccoli is a comfort dish that can stay low carb if you keep the sauce straightforward.
Instead of the sugary store-bought sauces, try making your own sauce using soy sauce, sesame oil, garlic, and ginger. The broccoli and beef make the dish more filling and satisfying and also reheats surprisingly well after batch cooking.
30) Sardine Cucumber Salad
In my experience, sardines tend to be controversial. However, if you are taking the sardines, you are getting a powerful lunch as they are high in protein and omega 3, and also very tasty. You can mix the sardines with some lemon, herbs, and a bit of mayonnaise or olive oil and then put it on some slices of cucumber. I would personally never bring this to a quiet office, unless you intend to make a bit of a chaos monkey.
31) Chicken And Mushroom Skillet
This lunch has the taste of a winter themed dinner. Start by sautéing the mushrooms. After that, combine the chicken with a splash of cream (or cream cheese) and herbs, until it reaches a saucy consistency. The green beans add a refreshing taste and brightens things up. If broth and mustard are not things you can tolerate, then try using a broth and mustard combo instead.
32) Chicken Broth Bowl
To highlight the dish’s broth component, I prioritise the implementation of that goal in the components of the broth. I put bok choy and chicken into the warm chicken broth that has garlic and ginger. I finish the dish with a soft-boiled egg on top. The egg adds a surprise and an exquisite richness to the dish. If you want to add a component that provides a heavier chewing factor, you could add some sliced mushrooms or possibly shirataki noodles (not everyone loves these so use caution when adding).
33) Roasted Chicken Thighs

Chicken thighs stand out among other kinds of meat as you can still get a juicy product even if you go a little over on the cooking time. When you pair that with a mayonnaise, vinegar, and mustard slaw (no sugary stuff) you are set up for a wonderfully salty, tangy, and crunchy experience. If you are looking for something that will last you until dinner, this is a great option. I do like to add some celery seed on occasion if I want to feel a little old school.
34) Taco Stuffed Peppers
Stuffed peppers may look challenging, but in actuality, they are simpler than they seem.
Fill halved peppers with seasoned ground meat, top with cheese, bake until the peppers soften, and you’ve got a tidy lunch that reheats well.
Peppers add sweetness and bulk to the dish without a significant number of carbs. If you like things a bit saucier, add some salsa just before serving.
35) Chicken Caesar Wrap

There are days when I wish I could simply grab a wrap instead of a bowl that I have to keep watching with a fork. For this, use a large leaf of lettuce, or a collard leaf that you have blanched. Add chicken, romaine, parmesan cheese, and some dress, and then wrap it up. Collards are the better option for packed lunches, since lettuce tends to rip when you overstuff the container. (Ask me how I know). If you have a nostalgia for sandwiches, this is especially for you.
36) Shrimp Avocado Bowl
Prepared shrimp are great, and seasoning them with some chili-lime seasoning will only make them better. They will be ready to eat in no-time, and added to some shredded cabbage which will provide a crunchy element, and some avocado which will give a creamy balance, you now have a light and refreshing lunch that will be a breeze to eat. If you want to add some extra protein, you can throw in a boiled egg, or if you want you can add a spoon of Greek yogurt which will also serve as a nice quick sauce. For me, I really like these on hot days when I don’t want to eat steaming leftovers again.
