1) Sheet Pan Chicken Thighs

Slice up some cabbage and you’ve got your thighs. Drizzle everything with olive oil, salt and pepper, and smoked paprika, toss it all onto a roasting pan, then roast everything until the cabbage gets really kind of crispy and all of the chicken juices sort of marinate with that cabbage. You can take a lemon and squeeze it on there as well.

2) Chicken And White Bean Skillet

Brown chicken pieces, dump a can of white beans in there, and leave the liquid in if you want because maybe it’ll thicken up to a sauce, some garlic, some broth to give it flavor. Let it simmer until the beans get a little bit creamy.

What I do when I use white beans is I use my immersion blender and mix them up to make it extra creamy. Then you can dice up some kale or some spinach and throw it in right at the end.

3) Chicken Fried Rice

Dice that leftover cooked chicken from the night before and toss it in a pan with some rice, eggs, frozen peas, soy sauce, and then even some sesame oil at the end. Just toss it around and dinner’s done.

4) Chicken Drumsticks And Potatoes

Drumsticks are great and they’ll satisfy everybody in the family. Put some lemon juice, black pepper, salt, and oil, and then add some diced up potato. Roast the potatoes and the skins until they’re golden and then toss on the garlic powder. Dinner.

5) Creamy Dijon Chicken

Sear some chicken cutlets, then add some Dijon, chicken broth, and some milk. You can take milk and a little bit of flour and some of that chicken juice and mix it up, and then pair it with whatever you’ve got. Maybe some leftover spaghetti, or some of those roast potatoes from the night before.

6) BBQ Chicken Sloppy Joes

Take simmered cooked chicken, even just that pre-diced rotisserie chicken, some barbecue sauce, saute some onions, and toss it onto a bun with pickles or coleslaw. That’s really yummy. You can also cook the chicken overnight in a crock pot. We do that a lot.

7) Chicken And Black Bean Tacos

Warm up some black beans and toss in some cumin and water or broth. Then put in some of that shredded chicken, either from the rotisserie chicken or from those thighs you cooked earlier in the week, and just let it simmer.

Then warm up some tortillas and grab the pico out of the fridge, or whatever you have. Onions, cilantro, set it up in bowls, and then everyone can make it on their own.

8) One Pot Chicken And Rice

Brown your chicken. Add some raw rice to that and another splash of broth. Frozen veggies go in near the very end just so they get some color, so they’re steamed but still crispy. It’s all in one pot. It’s easy and you’re done.

9) Crispy Chicken Cutlets

Pound the chicken to make it thin, dip it in egg, and then dip it in breadcrumbs and press them so they really get on there. Sprinkle everything with some salt, pepper, and of course garlic powder.

Fry it in a pan with some oil. Get the oil a little bit hot and then put it right in there. Squeeze a little lemon on it, and then you can either slice it up and put it over salad or some pasta, whatever you have on hand.

10) Chicken Noodle Soup

Take your soup pot and throw in onions, carrots and celery, salt and pepper. Mix that all up until it starts to smell yummy, and then put the broth in there. Use the shredded chicken. Leftover chicken and box broth is really an easy way to do this, and put the noodles in towards the end so they don’t get all thick and sticky and gross.

11) Chicken And Broccoli Stir Fry

This is just about being fast. Throw some chicken strips in the pan with oil, then steam some broccoli, and then put it all together with soy sauce, garlic, a little bit of sugar, a little bit of water, and cornstarch. That creates a sticky sauce that helps elevate the rice, and if you don’t have any broccoli, frozen green beans also work really great.

Toss some chickpeas in a pan and season them with things that you like, like cumin, paprika, salt, oil, and pepper. Then roast them with the chicken legs until everything is crispy and all that juice gets on those beans. Then you can add maybe a little lemon or a scoop of yogurt, and it’s a light, easy, yummy dinner.

13) Chicken Parmesan

You’re going to pan fry the cutlets. Take the chicken with a little bit of egg, dip it in there, and then dip it in some bread crumbs, crush them on there, and crisp those up.

Once they’re done, spoon on some jarred marinara sauce and put some mozzarella cheese on top. Then put a lid over it and let that all get melty and good. You can put it on toasted bread or pasta, or just have it with a side salad.

14) Chicken Peanut Noodles

Take some peanut butter, everybody has peanut butter, and whisk it together with some soy sauce, vinegar, lime juice, a little warm water, and a little bit of sugar. Then toss all that with some noodles. I like to use just spaghetti noodles, honestly, and shredded chicken.

It’s really comforting. Dice up some chives and sprinkle them on top. You can even toss some sriracha or some chili crisp on top.

15) Chicken Quesadillas

Really easy. Get a tortilla, put some cooked chicken, spinach, cheese, whatever you’ve got in the fridge, fold it, and toast it in a dry skillet until it gets crispy. If you’ve got kids, you can leave the spinach out. If you don’t have sour cream, just serve it with yogurt, and get some pico or some salsa out of your fridge.

16) Sweet And Sour Chicken Meatballs

Wet hands help when you mix ground chicken, they keep the chicken off of your hands. Mix the ground chicken up with bread crumbs, egg, salt, and garlic, roll it into meatballs, and bake it or pan sear it. It’s a little bit easier to bake. You can add bell peppers and simmer them in a quick sweet sauce of ketchup, vinegar, and sugar, and that’s yummy.

17) Chicken Tortilla Soup

One of my favorites. Simmer the onion, garlic, and cumin, then toss in a can of tomatoes and some broth. Add some shredded chicken and a little bit of corn, and sprinkle some tortilla chips on top, or those little strips they sell.

Squeeze a lime on top. Some people like to toss on some sour cream and slice avocado on top as well. And if you have an immersion blender, you can blend it up before you put the chicken on.

18) Chicken And Dumplings

Delicious and always comforting. Make a basic chicken stew with carrots and celery, and then once you’re done, drop spoonfuls of dough on top and let them puff up. It’s really yummy and comforting. Add a little extra broth if you’d like, or you could add a little cream.

19) Teriyaki Chicken Bowls

You can make your own teriyaki or you can grab some from the grocery store, which is a lot easier. Brown the chicken. Sprinkle the teriyaki sauce on top and let it just bubble. It’s going to get glossy. You can serve it with rice and crunchy veggies like cabbage or some cucumber, and you can even use that chili crisp as well.

20) Chicken Caesar Wraps

If you don’t want to wash dishes, just toss some chopped romaine with a little bit of Caesar dressing. Add that leftover chicken and wrap it up in some tortillas. If you want to make your own dressing, some mayo, lemon, garlic, and parmesan mixed up tastes pretty similar.

21) Chicken And Lentil Stew

Brown some chicken thighs. Combine them with lentils, diced onion, carrots, and broth, and then just let that cook. It’s going to thicken up, and then you’re done. You can add a splash of vinegar right at the end.

22) Chicken Pot Pie

Make a quick filling with chicken, frozen peas, and carrots. Then spread that in a dish and top it with canned biscuits, or if you want to make a quick one you can do that with just like three ingredients. Bake it until the biscuits are golden and the edges are bubbly.

23) Chicken And Mushroom Pasta

Saute mushrooms and then add in a little garlic and some of that cooked chicken. You can combine it with whatever your favorite pasta is and a little bit of the water. Do a touch of butter or milk. Shred some parmesan cheese on there and add some salt and black pepper.

24) Buffalo Chicken Rice Bowls

There’s that shredded chicken again. Blend it with buffalo sauce and mix that together. Stack it on some rice. Toss in some celery, ranch, and blue cheese. You can drizzle that on top if it’s too hot.

25) Chicken And Corn Chowder

I love chicken and corn chowder, it’s delicious. Dice up some onions and simmer those with potatoes and broth. Toss in a can of corn or frozen corn, and then add the chicken right at the end. You can toss in a splash of milk.

Serve it with some warm bread, even if you get a baguette from the grocery store and just warm it up. You’ve got to have bread with corn chowder.

Take some chicken breasts and cover them with cumin, paprika, some garlic, and a little cinnamon, then sear them in the pan with a little oil until brown. Dice it up and put it in the pita with some diced cucumber and yogurt, and dinner is done.

27) Chicken Pesto Pasta

Get some warm pasta, just boil some water. You could use penne or spaghetti or some other kind of your favorite pasta. Save some pasta water. Dice up that chicken. I like to add in grape tomatoes and diced spinach.

28) Honey Garlic Chicken Thighs

Sear those thighs and make a sauce by simmering honey, soy sauce, garlic, and a little vinegar. Mix that up and it’s going to stick to the chicken, and you can serve it with some rice or some greens. I like to sprinkle some sesame seeds on top.

29) Chicken Veggie Ramen

Ramen is the best. Throw some instant ramen noodles in and boil those up, then add some cooked chicken and greens like spinach to the broth and simmer it all. Simmer the noodles, and if you want, put an egg on top.

Add some of the seasoning packets or some soy sauce, but you don’t have to use all of it. This is a great way to sort of get rid of things in the fridge, so dice up the green onions you have and throw those on top, again with the chili crisp on top. You can use a lot of broth or not so much broth.

30) Slow Cooker Chicken Tacos

Take some chicken breast, salsa, and a block of cream cheese, put it in a slow cooker, and cook it. Then shred it up and mix it up. Warm up some tortillas and maybe slice up some avocados.

Kids love this, everybody loves this. You can also drizzle it over nachos, and that’s delicious.

31) Chicken And Stuffing Bake

Layer some cooked chicken and cover it with a sauce, then toss it with a stuffing mix and bake it. The top is going to get really crispy, sort of like a Thanksgiving chicken meal.

32) Chicken Sweet Potato Hash

Dice up sweet potatoes and they’re going to cook really fast. Saute them and then get them a little bit brown, and add some onion and shredded chicken. You can put a fried egg in there and you’ve got a great breakfast for dinner.

Get some chicken and season it with salt, pepper, oregano, garlic, and lemon, and then serve it over rice with some diced cucumber and tomato. You could just grate some cucumber into yogurt and mix it up with some salt.

34) Chicken And Gravy Sandwiches

Warm chicken in some gravy. Spoon all of that over toast, and find whatever vegetables you have left and put those on the side. You can also put some black pepper or parsley on top and have it like an open face sandwich.
