Cooking in 400 degree heat with a shirt stuck to my back really is not very enjoyable, but I do still enjoy summer. Consider this list for the evenings when you’d like to make dinner feel a little more special and abundant: no oven preheating needed. Although the oven is not involved, some of these use the stovop, gril or kettle. Furthermore, if you are serving a meal to a group, these meals can easily be supplemented with a salad, a loaf of bread, or a bowl of fruit, and no one will feel shortchanged.

1) Caprese Salad

Every summer, the first really hot night always ends the same way. I purchase tomatoes as though I’m preparing for a major event, only to recall that I’m simply entertaining… myself. Caprese is easy too: just slice the ingredients and add some salt and a drizzle of olive oil, and you’re done. Don’t hesitate to use that olive oil saved for special occasions. You’re special too. To create a more rustic experience, feel free to place some torn, crusty bread directly on the plate to soak up the extra tomato liquid.
2) Rotisserie Chicken Salad

Using rotisserie chicken to make summer dinners is a foolproof way to save time and I will not regret doing that. The so-called “dressing” is merely a comment on attitude, but with warm chicken over cold greens, plus a lemon, olive oil, salt, and pepper concoction, it becomes an attitude statement. I like incorporating crunchy elements such as cucumbers, radishes, or croutons to make it feel more like a meal and not a punishment. If you are feeling particularly ambitious, you can save the bones to make stock. But if not, it’s summer.
3) Shrimp Cocktail Dinner
I find it charming in a “martini glass at 6pm” kind of way. If the shrimp smells really briny, wash it and put it in the refrigerator immediately. Most of the work is done by a sauce that packs a punch (ketchup, horseradish, lemon, hot sauce). Surprisingly enough, pairing them with sliced avocado and some crackers is very satisfying.
4) Tuna Stuffed Tomatoes
At first glance, this appears to be the kind of dish that a rational person, say an aunt, would enjoy. Until, naturally, you come to the conclusion that it is, in fact, quite good. Make tuna salad the way you actually like it (mayo, yogurt, olive oil, mustard, chopped pickles, no rules). Scoop it into big tomatoes and let the juices blend a little. If you are quite famished, consider pairing it with potato chips. The crunch enhances the experience.
5) Gazpacho Dinner

I must admit that, in the past, I perceived gazpacho as merely being cold salsa in a bowl (which is not very flattering). Then I had a silky punching version that tasted like summer. Combine and blend the tomatoes, cucumber, peppers, garlic, olive oil and vinegar, then chill to the desired temperature. Here bread is a must; you will need something to mop and swipe.
6) Greek Salad

Chickpeas appear to be the added ingredient that tames the boldness of the salad, which consists mainly of salty feta, olives, and pungent onions. My favorite dressing is simple: olive oil and red wine vinegar with some dried oregano and a touch of sugar to coax shy tomatoes. Give the cucumbers a chance to sit for 10 minutes so they can soak up the flavors of the dressing. If you have pita, warm it in a dry pan for 30 seconds and give yourself a pat on the back for being so clever.
7) Fish Toast

I’m feeling indifferent towards this dinner but still would like something of reasonable quality. Rub a halved garlic clove on the bread after it has been toasted. Next, add a generous amount of sardines (or tuna), sliced tomatoes, and a large amount of pepper. A touch of lemon enhances the flavor. If sardines are not to your liking, do not make an attempt to eat them. Some people respond in other ways, and by `respond`, I mean `get angry`.
8) Smoked Salmon Board

An confident elevated expression of breakfast for dinner. Set all the ingredients (bagels, cream cheese, smoked salmon, capers, red onion, cucumber) on the table and let guests make their own combinations. The effort required is minimal; the rewards are maximized, and no one complains since it seems like a treat. To achieve a balance with the richness, I enjoy adding a generous portion of arugula with lemon.
9) Watermelon Feta Salad
Although it may seem strange, you won’t understand the appeal of the combination unless you try it, and once you do, you might find yourself wanting to eat it over and over again. Mint, even at room temperature, gives a cold feeling. The combination of sweet and salty flavors, along with mint, makes for an interesting experience. Prosciutto takes it to a different level as a dinner item, whereas without it, it is a glorious side. If your watermelon tastes bland, try adding a sprinkle of flaky salt. It’ll help a great deal.
10) Corn Avocado Salad
Sweet and crunchy summer corn straight from the cob has a taste and texture that simply cannot be matched by corn that has been cooked. Cut it off the cob, and mix it with avocado, tomatoes, lime, cilantro, and add something spicy if you want to kick it up a notch. The first time I made this, I worried that it might seem ‘too raw,’ but I ended up eating half the bowl while standing at the counter. It can be enjoyed alongside tortilla chips or anything grilled.
11) Pesto Pasta Salad

The oven can be left out; It’s also a payoff you can have for both lunch and dinner and while pasta can be boiled, that’s the only effort required. To allow for absorption, mix the hot pasta with the pesto, and afterward, incorporate the tomatoes and mozzarella to lower the temperature. Adding a little more olive oil will keep it from freezing in the fridge. You can buy pesto if basil is expensive or if it looks a little brown. Simply add lemon for some brightness.
12) Sesame Noodles

I prepare these noodles when I want my dinner to be a little bit indulgent while still having a cooling effect. Mix together whisked peanut butter, soy sauce, sesame oil, rice vinegar, and a little honey, then combine with the prepared and rinsed noodles. The sauce can be made ahead of time and actually gets better the longer it’s in the fridge.
13) Couscous Salad
Couscous feels almost like cheating; there’s hardly anything to do. Simply boil some water and wait. Cover the dish and allow it to steam. Next, add some culinary flair with lemon zest, herbs, cucumber, and olive oil. If you would like this to be more substantial, add chickpeas or a can of tuna. While I was “setting the table” (or rather, avoiding my chore), I might have snacked straight from the mixing bowl.
14) BLT Salad
Making a BLT is a classic summer ritual. There are a handful of instances where the impulse to make a sandwich doesn’t occur to me. First, prepare the bacon in the skillet, then create a mayo and lemon dressing to mix with the lettuce and tomatoes. Lastly, place the bacon on top. It has everything you’re looking for — a crunchy, juicy, and salty combination. I value the inclusion of avocado on the sandwich. Some may say it is a little self-satisfied, but I still admire it.
15) Steak Salad
You can save time and energy by not heating your entire house and cooking a steak in your pan. Place slices on a bed of arugula, along with ripe peaches and a bit of sharp cheese. (Feta or blue works well). When paired with the peppery greens, the sweet fruit takes the entire dish to a restaurant quality level, as opposed to another sweatshop kitchen meal. The juices may run as you cut, which may be a tiny tragedy. Perhaps, let the steak rest before you start chasing those juices across the cutting board.
16) Chicken Caesar Wraps
While a Caesar salad is nice on its own, the fact that it is packaged in a tactile container makes it feel like a fully rounded meal, one that you could eat with one hand. It seems to suggest that it would be possible to complete it while seated at a table, and while getting up to refill your glass of water for the fourth time. If you want to avoid meat, use leftover chicken, rotisserie chicken, or chickpeas. Most importantly, an excellent Caesar dressing matters most. You cannot ruin it, as long as you add sufficient lemon and black pepper.
17) Cold Soba Noodles
When I want a light meal on a night, my go-to option is cold soba. Cook the noodles as per the instructions, cool them down with cold water. Serve with a simple dipping sauce made with soy sauce, mirin, and a little sesame oil (if you only have soy sauce and sugar, that works as well). You are welcome to include a cucumber or a soft-boiled egg as you wish. It is soft and nice but not dull like a linen shirt.
18) Charcuterie Dinner

Some nights, I want dinner to evoke those evenings spent at a friend’s house, just grazing and chatting away in the kitchen. Please provide cheese, something with salt, a crunchy item, a pickled item, and fruit. We will take your word that it is dinner time. The sole thing you should note is the necessity of including a protein, unless you plan to be hungry again at 9:30.
19) Rice Paper Rolls
Even though rice paper rolls seem complicated, most of what you have to do is assemble the different components, which can even be pretty relaxing. Take cooked shrimp or tofu, combine with some herbs and lettuce, and roll it up like a small burrito. The first one always rips. That’s the chef’s treat. However, it wouldn’t be complete without peanut sauce (or, even, sweet chilli sauce).
20) Avocado Toast

This is the “I need to eat dinner in five minutes but I still have standards” move. Mash the white beans, then mix in olive oil, salt, and lemon juice. Then top it with avocado on toast. It is indeed nutritious and offers lasting sustenance. If you have any, toss in the chili flakes, as the heat elevates the overall flavor of the dish.
21) Savory Cottage Cheese Bowl

For many years, I held out against cottage cheese as it seemed like something reserved for outdated diets. I had a breakthrough when I experimented with the combination of tomatoes, cucumbers, olive oil, and a heavy dose of pepper. It is odd, however, on a scorching day, it can be rejuvenating, and it serves as a great source of protein. While enjoying this treat, you might consider having it with some toast or pita. This approach transforms the situation from a light snacking break into something that resembles dinner more closely.
22) Hummus Plate

A dinner featuring hummus is about as simple as it comes. Scoop some onto your plate, drizzle some olive oil, add some paprika and some crunchy vegetables and pita. You may also include a hard-boiled egg or some canned dolmas if you like. The dinner instills in an individual a feeling of calm self-confidence.
23) Melon Prosciutto Salad

Absolutely splendid with almost no effort, which is my favorite style. The intelligent Italian pairing of salty and sweet makes each flavor more distinct and enhances the overall experience. Since arugula adds a bite, it does not taste like dessert cosplay. If you have balsamic, a small drizzle is acceptable, just don’t drown it.
24) Fish Tacos

Cooking fish in a pan takes about eight minutes, so even in the heat, that is bearable. After seasoning the filets, sear and flake them, and place them in the warm tortillas along with cabbage and lime. Mixing hot sauce with sour cream or yogurt gives you an opportunity to impress people with a sauce that looks like you put some thought into it. Be patient, use a fan, and it will pay off.
25) Nicoise Salad

This shreddite salad is crafted for individuals who enjoy aesthetic presentations while dining. Utilize ingredients including canned tuna, boiled potatoes, blanched green beans (or snap peas if you’re feeling adventurous), olives, and eggs. The mustard vinaigrette is what unifies all the flavors. It is also considerate of you to allow the practice of eating in stages as you clean up, which to me is the most sincere form of dining.
26) Marinated White Beans
Beans that soak up the dressing for a period of time acquire a surprisingly decadent attribute. Mix together the canned white beans, olive oil, vinegar, garlic, herbs, and halved cherry tomatoes. If you’re looking to add a bite, add the arugula as the last step.

Chicken salad can be dull, but it doesn’t have to be. To add some sweetness, try including some crunchy celery, grapes, or diced apples. I have sent this to my friends, and watching them take one more is the highest compliment I could receive.
30) Upgraded Instant Ramen

I will not hold it against you if you consider ramen to be a full meal. Consider adding soft-boiled eggs, scallions, leftover chicken, and spinach for an enhanced dish. Next, add some hot water, or heat it gently for a short period. In very warm weather, consider making a lighter broth instead without making it too hot. The kitchen can serve the purpose of staying calm
31) Burrata Peach Salad

The summertime abundance of fruits justifies the illogical buying of burrata. Open it to let the insides spill out, elegantly scattering slices of peach and basil. Don’t be shy; salt is important here. Adding some toasted bread will turn dinner into a mini vacation.
32) Poke-Style Bowl
This adequately fulfills the “bowl dinner” craving without the use of raw fish. To prepare this dish, place the flaked cooked salmon on the rice. Next, cover with slices of cucumber, diced avocado, and finish with a drizzle of soy-sesame sauce. Having some Nori strips is optional but adds an extra touch. It is easy to make, will not cause an unpleasant smell to linger in the house, and will not require a full scale cooking operation.
33) Tomato Ricotta Toast
Having good tomatoes means that you should use them on toast at least once a week. Spread the ricotta and then add the tomatoes. Salt everything well and top with olive oil. If you appreciate that kind of thing, then the anchovy on top is salty magic. If not, omit it and instead add lemon zest; the dish will still taste bright and alive.
34) Fried Chicken Picnic Plate

I wholeheartedly stand by the belief that cold fried chicken is great, and I don’t think that I’ll ever change my mind. You can buy it precooked and then add coleslaw and pickles for an easy no-heat meal. The essential consideration when selecting a chicken is whether it will retain flavor when served as a chilled dish. If you’re looking to feel a little virtuous, you can add a side of sliced tomatoes marinated in vinegar and sprinkled with salt.
35) Summer Nachos

These nachos are not your typical oven nachos; they are made with fresh ingredients, have awesome crunch, and come with a side of delicious fun! Add some toffees and then place black beans, fresh salsa, avocado, as well as pickled jalapeños. If you would like, you can use crumbled Cotija or Feta cheese, and you can skip melting anything. There is just one rule: eat fast so the chips don’t get soggy.
36) Fruit And Nut Salad
This is the meal I make when I want to pretend that I am a person with a simple, stress-free life and a clean, organized refrigerator.
