Some weeknights I want dinner to be comforting and real, but I also want it done now, with no epic chopping montage. On those evenings when I feel hungry and a little grumpy and think about calling cereal a meal (again) these are the dinners I rely on.
If you have some basic ingredients then everything here can take 20 minutes or less. These ingredients are pasta, eggs, canned beans, a bag of greens and at least one sauce you like. I won’t say anything if you take a shortcut like with pre-cut veggies or a rotisserie chicken or microwaveable rice.

1) Shrimp Scampi Pasta
I admit that shrimp feels a little like cheating. It cooks faster than I can get the colander. Sauté shrimp in butter and olive oil with sliced garlic and a pinch of chili flakes, then toss with hot pasta and a bit of pasta water to make it silky. The taste of lemon brings freshness. Having a bag of salad with you is the ultimate ‘I’m trying to get my life together’ dinner.
2) Kimchi Fried Rice
This is what I throw together when I’m tired, but still want something with some pizzazz. Feel free to use leftover rice; if you don’t have any, then microwavable rice is an option and I won’t judge. In a hot pan, sizzle some kimchi, then add rice, soy sauce, and a bit of sesame oil. Top it with a fried egg! Having a runny yolk as a sauce feels mildly fancy for a Tuesday.
3) Pesto Tortellini

Refrigerated tortellini is a treasure. Boil it, toss with pesto, and add cherry tomatoes that you quickly blister in a pan until sweet. If you have spinach, toss a handful in at the end so it wilts. It may not be literally true, but I will take it.
4) Sheet-Pan Sausage And Broccolini
Sheet-pan dinners can be slow, but the broiler is the secret trapdoor. Slice the precooked chicken sausage, and mix with broccolini and olive oil, then broil until the edges are crispy. End with lemon and a spoonful of mustard if you‘re feeling adventurous.
5) Tuna Melt Quesadillas
Until you try this, it sounds odd, and after you try it, it becomes one of those “how did I not think of this meals.”
Mix some canned tuna with a little mayo or Greek yogurt, chopped pickles, and some pepper. Wrap in tortillas with cheddar cheese and pan toast until golden brown and crunchy on the outside and warm and gooey on the inside. You’ll get that tuna melt feeling without the diner cleanup
6) Chickpea Coconut Curry
Using canned chickpeas saves me from having to worry about a last minute dinner emergency! In a saucepan, to your desired amount of coconut milk, add your preferred amount of curry powder (or paste) and garlic, and a little ginger if desired. As that heats, add and stir the spinach so that it wilts. To make it feel like it was sourced from a restaurant and to round out the flavors, add a squeeze of lime. Serve with rice (even microwave rice is fine) or toast.
7) Caprese Chicken Cutlets
Thin chicken cutlets cook quickly, so they won’t take long to prepare while you get distracted. Sear them in a hot pan and add mozzarella. Cover to let it melt, then add sliced tomatoes and basil. Just a light drizzle of balsamic glaze gives it that restaurant feel. If you want something more filling, you can also put it over arugula with some olive oil and salt and call it a salad situation.
8) Peanut Soba Noodles
If the house is warm, I want something cold and slurpy for dinner. To make the sauce, whisk peanut butter with soy sauce, rice vinegar, and a little honey or sugar, and if you like heat, chili crisp.
Combine with the prepared soba noodles and a pile of fresh crunchy cucumbers. It isn’t overly complicated, and somehow, even without lots of protein, it is comforting.
9) Omelet Dinner

Eggs are basically a weeknight miracle and never get old. Just crack a few with a little salt, and cook it gently. Then, toss in some feta and any herbs that might still be alive in your fridge. The whole thing takes maybe six minutes if you include the time you spend standing in front of the fridge, trying to figure out who you are that day. When you serve it with some toast and a piece of fruit, it really makes it feel like a proper meal instead of just a scramble in disguise.
10) Turkey Lettuce Wraps
I always keep gochujang on hand, as it turns incredibly bland ground turkey into something so much better. Just brown your ground turkey, then add gochujang, soy sauce and a touch of sugar, and let it get all nice and glossy. Then, scoop it into some crunchy lettuce leaves. If you have them, you can add some cucumber or shredded carrot. It gets a messy but in a good way, and the crunch really helps to keep it fresh.
11) Lemon Pepper Salmon

Salmon is fast food in disguise. Sear fillets with the skin side down until crisp. Then, flip, add lemon, and finish with a little butter. Because my stove runs hot, I have to keep an eye on it to ensure the food doesn’t dry out. If you pair it with the pre-packaged salad and microwaveable rice, you’ve got a complete meal.
12) Creamy Tomato Gnocchi

Cooking store-bought gnocchi is almost ridiculously easy. For the marinara sauce, you warm it up, mix in some cream (or mascarpone for the fancy people), and then stir in the gnocchi until it’s tender. If you want, you can toss in a basil leaf or some oregano. It’s the best comfort food meal because there’s no sink full of dishes afterwards.
13) Black Bean Tacos

Dinner can’t get easier and sloppier than this. Just open the can of black beans, grab some spices, and you’re almost done. For the beans, just add some cumin, garlic, and chili powder, and then spoon the mix into some tortillas. For the slaw, toss some shredded cabbage with lime juice, salt, and a little bit of mayo or olive oil. It’s a light hearty meal and it requires very little effort.
14) Steak Salad
A steak salad doesn’t take very long to make. A thin-cut steak should finish cooking just as you’re done dressing your salad. Just do a hot sear on the steak, let it rest for a moment, then slice it thin.
Let’s toss the arugula with lemon, olive oil, salt, and parmesan as a dressing, then lay the steak on top. That might feel like a lot of dressing, but the majority of what you made still consists of salad and they are still doing the heavy lifting.
15) Pantry Carbonara
Theoretically, carbonara is simple. In practice, it can get you to sweat a little so keep the heat low and breathe. Add in the bacon and don’t forget to stir the hot pasta with the eggs and cheese off the heat to prevent scrambling. Use the pasta water you saved to make it creamy, and then add a snowstorm of black pepper. It gives that vibe of doing something both lucky and competent.
16) Chicken Caesar Wraps

I love using rotisserie chicken as one of my “I didn’t cook, but I still ate well” tools. Mix some shredded chicken with romaine, parmesan, and Caesar dressing and wrap it all up in some tortillas. If you have some, crush croutons for extra crunch. This also makes a great option if you’ve got desk dinner plans.
17) Miso Soup
When I want something light but still want a full meal, this is my go-to.
Tofu cubes, scallions, and some spinach are added to the broth after miso is stirred in. If you desire a more filling meal, try quick-cook noodles. This product will have you feeling as if you have taken good care of yourself.
18) Sardine Spaghetti
Sardines are divisive but for some (like me) they are a pantry delicacy. Heat the marinara sauce with the garlic and chili flakes, then add the sardines and let them dissolve in the sauce. Mix and finish with lemon zest, if you have it. It may come from a can but it is a little posh and has a nice spicy kick.
19) Greek Pita Pizzas
Making pita pizzas means I don’t have to turn on the oven for a whole thing. Pitas are toasted in a skillet or toaster oven with a little olive oil, then topped with feta, olives, tomatoes, and oregano. Just a quick broil and everything melts into a salty snack dinner. I usually grab one while standing at the counter and pretend I didn’t.
20) White Bean Toast
This is the dinner equivalent of a deep breath. Combine canned white beans with olive oil, lemon juice, salt, and pepper to taste. then spread the mixture on a warm slice of toast. It still works if you don’t have garlic or rosemary. It’s uncomplicated, feels clean, and filling.
21) Beef And Broccoli
Chop some fresh vegetables to add to the beef sliced into strips. Stir up some broccoli and sauce, which consists of soy, sugar, and garlic and combine everything alongside some rice. You have yourself a classic. And to top it all off, it takes less than 20 minutes!
22) Cacio E Pepe

Black pepper goes perfectly with the pasta that is freshly made; however, you don’t want to mix it too fast or the pepper may clump. Just add another drizzle of the starchy pasta water to make it all come together. Ramen can sometimes be tricky, but the payoff is so worth it.
23) Chicken Ramen
Ramen noodles can become dinner too if you show them a little love. You can add some shredded rotisserie chicken, a handful of some greens, and a soft boiled egg (or just crack one in there to poach it). Chili oil makes it a little spicy if you like. It is really quick, warm, and a salty flavor is amazing for these long nights.
24) Halloumi Chickpea Skillet
I enjoy halloumi a lot because it is like a protein instead of cheese. Sauté some slices until golden brown, then add in the chickpeas with some smoked paprika and olive oil to warm up. If you have some, finish it with lemon and parsley, and you’ll have something satisfying, squeaky, and salty.
25) Tomato Basil Grilled Cheese
There are moments when you simply need a grilled cheese sandwich, especially, crunchy comfort food is the mood. If you want to add some freshness you can add some sliced tomato and some fresh basil, just make sure you pat the tomatoes dry so you don’t make a soggy situation. Cook it at a lower temperature so the bread is brown while the cheese has not melted completely. If you have some soup, enjoy that with it. Or just go full sandwich.
26) Turkey Bolognese

This is the weeknight cousin of long-simmered bolognese that can take all weekend to prepare.
While you cook the pasta, brown some ground turkey with garlic, then mix it with some marinara sauce and let it simmer. To soften the sauce and improve its taste, add a little milk. It could be considered nontraditional, but it really does taste good.
27) Ravioli With Brown Butter
Refrigerated ravioli and brown butter is the easiest way to make something that looks a little fancy. You want the butter to be a little brown and smell slightly nutty, that’s when you know to mix it with the ravioli. If you have it, add sage. You really don’t even have to do any work, it will smell like you put in a lot of effort. To complete this dish, add some peas or any greens you want.
28) Teriyaki Tofu Bowls
Tofu is great if you don’t want to think too much about what to make. You just want to assemble the ingredients: drying it, cubing it, and cooking it until it’s golden. After this, add some bottled teriyaki and let it thicken. You can have this with rice and broccoli or any other vegetables you want. It’s really easy to make.
29) Warm Lentil Salad
For adults who want to have a “healthy-ish” dinner, without putting in too much effort, pre-cooked lentils are like a special ingredient. They need to be mixed with olive oil, lemon, and salt. After this, you can add feta and some crunchy veggies. If you have herbs, that would be great, but it will still taste good without them.
You won’t be tempted to go search for snacks an hour later.
30) Bacon And Peas Pasta
I often forget how useful these freezer peas are until I actually need them. Crisp some bacon, then add peas to the pan, and toss everything together with pasta and a bit of butter or olive oil. Parmesan brings it all together. It is every bit weeknight-friendly, quick, sweet, and salty.
31) Chicken Shawarma Bowls

I’m not saying this is real; it’s more of a weeknight impression that scratches the itch. Slice chicken thin, cook fast with a shawarma spice blend (or cumin, paprika, garlic), then serve over rice with chopped cucumber and tomato. For a simple sauce, combine yogurt with lemon and garlic. Its flavor experience is satisfying and bright. You don’t need to use the entire marinade to enjoy it.
32) Veggie Stir-Fry
This is my crisper clean-out dinner, which means it varies each time. Stir-fry any vegetables you want and make a simple sauce (soy sauce, vinegar, and a bit of sugar), and add cashews at the end. Keep them moving so they remain crisp and tender.
It’s a good thing that you can take a break from cooking for 20 seconds to do a quick restart and reposition all the garlic and save the rest of the meal.
33) Ricotta Lemon Pasta
Ricotta is a cheese that is not considered heavy as, for example, full cream is. This means it is perfect for use in a creamy sauce. For the sauce, mix the ricotta, lemon zest, salt, and a bit of the water you used to cook the pasta to loosen the sauce and then combine it with the hot pasta. Sliced bell peppers that have been sautéed are sweet and add a nice pop of color to the dish. This is best enjoyed with black pepper added at the end.
34) Pizza Pasta
This is for your lazy nights when you feel like pizza but want to avoid any delivery orders. Mix warm marinara sauce with your pasta and then add mozzarella cheese and put a lid on the pot to let it melt into gooey pockets. Add pepperoni that has been cooked until it has crisp edges and everything will taste just like a pizza slice. I usually eat mine from a bowl and sit on the couch. I have no regrets.
35) Honey Mustard Pork Chops

Thin pork chops don’t take long to cook, but they can dry out if you aren’t careful. Make sure to keep the heat at medium-high and stay focused.
To make a good mustard glaze, mix mustard, a bit of honey, and a splash of vinegar. You want to glaze the protein at the end so that the sauce sticks and gets sharp. Roasted veggies will bring the whole thing together; it’s a complete meal.
36) Mediterranean Couscous
Couscous is the definition of instant gratification in grain form. It’s almost as effortless as boiling water, pouring it over the couscous, covering it, waiting a few minutes, fluffing it, and adding tuna, lemon, olive oil, and some random herbs. Toss in some chickpeas or feta if you want it to be a little more filling. It’s a little warm, a little messy, and very forgiving.
37) Creamy Mushroom Skillet
Every time I watch them do this it really feels like a magic trick. To do this, sauté them until browned, then add some garlic, some spinach, and either a little bit of cream or cream cheese to make it saucy. When you pour it over some toast or rice, it becomes a full meal. It becomes rather cocky if you include a fried egg on top.
38) BBQ Chicken Sandwiches

This is my ‘people are hungry, and I have five minutes’ move. Shred rotisserie chicken, warm it with barbecue sauce, and pile it onto buns. If you feel like it, you can quick-pickle some onions or add some store-bought slaw.
It is always a good choice, has a nice texture, and is a bit sticky.
39) Garlic Mussels
Even though mussels may appear fancy, they are really easy to prepare. Once they start to steam, they only need less than ten minutes. Prepare a saute of garlic in butter, and add a splash of white wine (or broth + squeeze of lemon) then cover to steam the mussels until they open. Discard any mussels that do not open. You will need to serve bread for dipping as the broth is the best part and you want to absorb as much as possible.
40) Avocado Toast

I can see this is a more assembly dinner, and honestly, I respect that. Mash the avocado and mix with lemon and salt, spread on the toast, and finish with smoked salmon, radish, and dill: whatever makes you happy. If salmon is not your taste (or your budget), a fried egg does the job beautifully. It’s fast, slightly more luxurious, and requires almost no cleaning up.
